Oil production follows the natural cycle of the olive tree. The trees alternate production years with rest years, and pruning—done between January and April—is key to keeping the trees young and productive. Harvesting occurs between November and December using machinery that gently shakes the trees to help the fruit detach as respectfully as possible.

A Carefully Managed Process

Every step in the production process is designed to preserve the oil’s freshness and quality. From harvesting to extraction at the mill, no more than one and a half hours pass, allowing acidity to remain below 0.2. Advanced technology controls temperature during mixing and extraction to ensure the oil retains all its properties.

Care and Preservation

Olive oil is a delicate product, with light and air as its biggest enemies. To protect it, the oil is stored in tanks where nitrogen is injected, preserving its flavor and aroma until it reaches the consumer.
